Nestled in the highlands of Kamojang, West Java, Wanoja Coffee presents a unique and meticulously crafted Extended Natural process coffee. It begins with the selection of ripe coffee cherries with optimal sugar levels and density, utilizing a blend of premium varieties such as Typica, Lini S, Sigararutang, and Kartika. Each cherry undergoes careful fermentation and drying for 21 to 28 days, with drying thickness adjusted to local weather conditions. This process continues until the green coffee beans achieve a moisture content of less than 12%, followed by a two-month resting period to maximize flavor development. The beans then undergo thorough sorting, including size, density, and hand sorting, ensuring only the highest-quality coffee beans with defect rates below 3%.
Grown at an altitude of 1,300–1,500 meters above sea level, this coffee reflects the personality of Kamojang’s natural environment. Its flavor profile highlights Syrah Grape, delivering a juicy balance of sweetness and acidity, offering an elegant and refined experience. The Tasmanian Cherry note adds depth with its intense sweetness and refreshing quality. Finally, Candied Blueberry rounds it out with a candy-like sweetness and rich blueberry aroma, creating a playful and captivating finish.
